Sakura Sushi Train is a $300,000 investment and owned by Sun Xiaoyu, also the owner of long line fishing company, Sunlog Investment (Fiji) Limited.
The move to invest into a Japanese fast food restaurant initially came about during his travel to Europe the past year where he was in search of Asian cuisine.
“We were in Europe last year and we wanted to find a very convenient food and restaurant but there was none,” at least where he was, Mr Xiaoyu said.
“But we went to Hong Kong and we found a number of sushi train restaurants there and it was then that we decided to open one here.”
When encountered with the question: How is it possible for a Chinese to run a Japanese restaurant?
Mr Xiaoyu laughed and said: “I studied in Japan, Nagoya for seven years. And it was here that I learnt of the culture, particularly of the sushi delicacy which Japanese cuisine is well known for.
“And while it didn’t immediately come to mind to first start then, I found that Suva would be the best location to open the restaurant here.”
Better yet, he also has a chef, Lin Jin, who has vast experiences a variety of dishes from all over Asia and Europe too.
Mr Lin said he loved cooking up different kinds of foods and Japanese food was unique in the sense that it required very articulate attention to details.
Sakura Sushi Train has just opened two weeks ago and already, Mr Xiaoyu said was usually very busy and he had been receiving very positive feedback from customers and friends.
“I will see how this goes because within six months time, I hope to open another one in Nadi to try out the tourism market and local market too.”
