Malolo plans to go organic

The newly re-opened Malolo Island Fiji Resort has plans to have a fully-organic vegetable garden.
Newly appointed executive chef,Yngve Muldal, who joined the resort from Etihad Airways, said they were going to ensure that all their herbs and vegetables are fresh from their garden.
Cyclone Evan, which passed directly over the island resort in December, completely damaged the resort’s vegetation and gardens.
Chef Muldal said the $1-million kitchen which the resort management invested in, was a chef’s dream.
“In Fiji, one of the problems that we have seen is obesity and NCDs (non-communicable diseases), and to counter that, it is important that we cook right,” he said.
“At the resort, within the next two weeks, we will have our vegetable garden up and running and we would be getting our herbs from there as well,” he said.
“With time, we will ensure that all vegetables grown here are fully organic.”
Chef Muldal said a lot of resorts would sell their used oil to resort staff, but this was not practiced at Malolo Island Fiji.
“Our core business is our guests and while we want people to have the true Fijian experience, it should not come at the cost of unhealthy eating,” Chef Muldal said.
Pastry chef Rhea Pacaud said the resort was taking its responsibility towards healthy eating very seriously.
The newly renovated resort opened doors to visitors after major refurbishment costing $5.5million, on Monday.
